Whole Rump Steak
Rump steak is a cut of beef. An NZ-cut from the rump primal, largely equivalent to the American sirloin.
The English “rump steak” is commonly called “sirloin” in American English.
British “sirloin” is often called short loin or “porterhouse” by Americans.
Is rump a good steak?
So even though rump steak won’t be quite as tender as NZ sirloin, it will more than make up for it with a deep, mineral savouriness. And what’s more, it’s half the price. Buy a well-aged piece of meat and cook it medium or medium-rare rather than full-on rare which, can be a little chewy.
